For me it depends.
I don't carry a lot except when I go a distance in winter or if bad weather is expected. Then I have my ski parka and ski pants, hat, gloves, mittens and balaclava. Extra wool socks. Boots. On most trips year round I carry enough tools to fix basic stuff. On trips I usually have a spare DI cassette (anything for which you have a spare never breaks!).
I do carry a collapsible shovel all winter, about 10 ft of chain with tow hooks on it, flares or reflectors, flashlight, work gloves. Two ice scrapers. I used to pack a come-along, but don't unless I'm going someplace where I'll only be on empty back roads. If I remember I throw in a blanket.
I always have water and snackage with me anyway on road trips.
But if you make sure your car is really prepped and drive intelligently, you aren't likely to need much of this stuff.
Still chance favors the prepared.
