Hmm, very interesting indeed. Are you in a possession of ELM27 Bluetooth dongle that you can connect to vehicle's OBD2 port and run Torque app on your android device? There is coolant temp monitor you can monitor via app and get a direct/live coolant temp reading reading straight from what ECU, in addition to other interesting live data.
Tech2 would also help if one or the other is available.
As per my vehicles, on both 9-5's, stat slowly begin to open at 84-85 deg C and both slow speed cooling fans come on at exactly 99 deg C
Whoever installed your stat, did they install it correctly with a tiny air bleeder valve pointing up into the cyl head? What coolant brand are you using and what water to coolant ratio is used for your application?
Pleased see attached WIS link (coolant temperature/pressure limits) as at what temp OEM stat is set to open, at what temperature low speed rad fan and high speed rad fan comes on/off.
