You are correct by saying that there is an option to remove that constant 1/2 way engine coolant temp reading via Tech2 and to have gauge float up and down with fluctuating coolant temperature.
I recall doing two stats on my 08 and 09 there was no particular key way for stat to go in, however installing that bleeder valve to the top was paramount.
Recommended coolant is (Fill the system to MAX with Saab genuine coolant, part no. 400 131 389 (1 litre), 400 131 397 (4 litres), and close the expansion tank lid. (Mix the coolant with equal parts coolant and water.)) I used Dexcool (Orange / ish in color) as it does not contain ethylene glycol as perhaps Universal (Green / ish in color) could have in its composition properties. Each coolant properties are different thus may boil or freeze at different temperatures and pressures.
