vvack makes a good point here (in addition to the one I was trying to make re the difference between buying a newer car like 9-5 and a classic like c900)... what constitutes a "history"?
For each Saab, I keep a folder, with every garage receipt and parts receipt (where I do some of my own work also). They aren't perfectly in order - I'd probably tidy that up if I were selling the car. I also have an excel sheet, so I enter the date cost mileage in that when I put it in the folder. That way I can track my cost (and will know if anything is getting out of hand, but of course I'd probably notice that anyway)... It is also useful for tracking when I last changed coolant, or atf or a belt etc, miles on tires, mm on brake pads when I swap wheels, etc... in short I am anal...
Records are also sometimes available to be printed by an indy or dealer, but that is harder to obtain (many cite privacy concerns)...
Anyway, records alone don't make a good car. When we were shopping, I looked at a 2003 9-5 that had the most fussy owners ever (their file of records since the car was new *was* in chronological order!)... with all the work done at the saab dealer... and when I went through the records, I was unhappy with the way the dealer had dealt with the dead turbo/sludged engine (even with engine replacement)... the thing still did not have pcv#6...
so as vvack says... it really is up to you to inspect (or to take to a saab indy) prior to purchase, but a good set of records is still valuable!
and I wouldn't pass on a great 2001 9-5 at the right price (if I needed yet another saab, which I don't)... but I'll admit every c900 that comes up in the classifieds pulls at me more...
