A 30 -35 boat is usually easy to single hand if you pay attention to how it's rigged. And you do need to be able to single hand the boat. And good mid-size boats handle well without the engine, which is an important skill to learn for when it decides not to work. It's important to be able to pick up/drop a mooring, set/pull the anchor or dock a boat under sail if the engine fails, you foul the prop or just want to show that you have your act together.
Getting in time in several boats is the best way to learn what you like and don't like. It's like cars: the differences between makes and models can be huge.
No Snaab is also right about true blue water boats. The ones that are meant to cross oceans are a LOT sturdier than basic coastal cruisers. You can go long distances in a fairly ordinary boat (with some mods), but they don't sail as well, hold as much and can't take the same kind of beating in bad weather that a real blue water boat can. To get one of those, bring lots of money.
And whatever you get, buy used, pay for a thorough marine survey, and try to get a good test sail in decent winds.
