There are furling/reefing systems that work fine. They are even used on some round the world race boats. Some roll the sail around the boom, others retract it like an awning into the mast. There are electric and hand crank versions. Head sails have had roller furls on them for ages. Those mostly work fine with some limitations.
The problem is Murphy's Law. And it's not just that "if something can go wrong it will," but that it will go wrong at the worst possible time: like when you really need to reduce sail and the mechanism jams and you have too much sail up in too much wind. That'd be a lot of fun at 3 AM.
I'm mostly old school on sails and rigging. I want to be able to get a sail up and down manually because there are only two moving parts: a sheave at the masthead and the winch on the side of the mast. It's not as convenient as pushing a button, but it limits the potential problems. You mention going up the mast.... you really don't want to have to do this at sea. But you do need to think about how you'd do it if you have to.
