You hit the big criticism of a 9-5 Aero, the industrial engine feel, especially from a 540 V8 perspective. Your BMW goggles also have you biased against the chassis, FWD an so forth. Drive more Passats (and Audis) and you'll appreciate the balance and capability of the 9-5 chassis.
But obviously you got over that, and the Saab won out. Is there something to the champagne budget a BMW V8 requires vs the affodability of a 9-5 that snagged you? When the champage flows I'd love to spend $65K + for a 545 BMW, but until then I'm very happy in my 2000 Aero SportWagon. BMW just re-introduced the 5 series wagon as a 530XiT, only $55k. Here at the BMW and Saab dealer I drive the 5's all the time, damn nice cars for an extra $15k, but slower. It takes a BMW V8 to match the punch of an Aero.
I'm quite happy living in the BMW shadow, almost all the BMW salesfolks here at BMW-Saab drive Saabs, built as well as you say, very pleasing in and out, and more punch for the dollar, and mostly summed up by Chris, our retired Marine sales guy, "Everybody has a BMW." Saab can and will sell more, but if Saabs ever get the popularity thing going like BMW, I may have to move on.
Once you get by the basic criticisms, which you are absolutely right in that they prevent us from selling as well as BWW, turbo torque can be pretty addictive.
And the biggest thing that no BMW can offer is that "All the cool people drive SportWagons" to quote myself.
