you hit the nail on the head. A car *should* last way more than 3 years. A 3 year old iphone is pretty darn out of date...
that said, car companies would love for us to change our cars every 3 or 4 years (ie lease)... makes them the most $$$... but that's very wasteful imho... built in tech helps sell that...
A standardized modular approach, as you suggest, is a good way to address that. Simplify the "firmly" built in stuff, and provide a standardized user upgradeable interface for tech (both mechanical interface and electrical... as you suggested...
built in, but not *permanently* built in is the way to go... and possibly optional also (for us Luddites or new owners who want to determine their electronics' "scope")...
all that said, even for older cars with DIN slots, it's hard enough to find an attractive high quality car stereo! All the manufacturers are into gimmicky crap because it sells... I can't imagine there aren't enough people like me who'd buy a *minimalist* high quality setup to make it profitable? there are in the hifi world... something about cars... so standardization to work with non-car-specific tech (eg iphone, generic android tablets etc) would be nice...
