If you don't like pumping the gas yourself, why not find a full-service
gas station that knows what 'full-service' means? If that fails, just
drive over to New Jersey, where they *have* to pump the gas for you. :)

I believe that you are SOL.
The latching style gas pump nozzles have been declared dangerous and
enviro-harmful.
The states have xxx amount of time to comply with the federales.
I know it's now the law in MA, but hasn't hit NH yet.
Although, I do know of one place in MA that basically said that they're not
changing over/disabling the latch until someone complains.
As far as the attendant refusing to pump gas for you, I don't know if the new
regulation applies to self-serve only, or if the attendants are basically
giving you the Bronx Cheer ;-)
Seriously, NYC has a lot of laws that go beyond the EPA and DOT stds.

On a historical note, we have NYC to thank for gas stations in the first
place. Previous to an NYC ordinance preventing storage of gas in the home
(too combustible) gas was purchased just like home heating oil (not
particularly combustible).
Note: Let's not get into discussion of 'flammability, too combustible and not
very combustible are relative terms ;-).

I find the gas cap itself to be pretty useful for jamming into the
nozzle handle to keep the trigger pressed. You still have to do it
yourself, but at least you don't have to stand there holding it the
whole time.

In Washington state it is almost exclusively self service stations. At one
particular brand almost all of the pumps have these little fume absorbers
on the nozzles which do not allow fuel to be pumped into my 1980 Saab 99 in
the normal manner. This is because those tanks were vented through the cap,
and not through filler like on most other cars. The absorber on the nozzles
form a seal and do not allow the tank to pressurize. To work around this
problem, we just turn the nozzle upside down which lets it sit cockeyed on
the car and then we can fill it on the auto setting.
