ATF must pass very stringent testing requirements to earn its label - any
ATF from a reputable refiner will be fine. More important than the brand
of the ATF is the frequency of change. When you pull the plug out of the
bottom, only half the fluid comes out. If the car (or transmission) is
relatively new, then taking it somewhere that attaches a machine to the
cooling lines to flush the entire system is a good idea. Otherwise, one
might change the fluid a second time within a few hundred miles to bump the
percentage of new oil up to 75%.

The steering fluid gets quite warm in operation, and circulates completely.
It is unlikely to be contaminated by moisture. It does get dark and pick
up debris from the pump and spool valve - I'd change the fluid every 50,000
miles. Newer 9000's have a filter in the reservoir which can and probably
should be changed with oil.

There is also a GM specification for PS fluid in the USA manuals. Any
fluid meeting this 'GM' spec is OK, and most of them do unless they are
made for specific brands, like 'Honda' PS fluid.
