I would (and probably will soon) use 'Zymol HD Cleanse'. Although it is
sold as a paint polish, it contains mostly nut oil and finely ground nut
meats as the abrasive. Can't think of a better choice for polishing
walnut
;-). I have used it the house on varnished woodwork and it works great
there.

Most furniture polish is just mineral oil with a drop of lemon oil added
for a scent. You can use baby oil, 5 weight motor oil (which makes a fine
motorcycle fork oil), or equivalent. I use recycled differential oil on
the handles of shovels.
