Check in this order:

1 - Overflow tank level correct when cold.
2 - Bleed air from top of engine when cold.
3 - Run 'til warm and see if this alleviates the erratic gauge. If not:



4 - Pull thermostat and boil in water on your stove to observe function.

Many Florida cars never use the heat. There is a very good chance that when
you opened the valve that it introduced air into your system that was
previously trapped in the heater core.

The erratic gauge could be a number of issues but the most likely cause is
air in the system or low coolant. As the bubbles pass the temp sensor the
vapor pressure changes. This can cause small pockets of hotter or boiling
coolant. This can happen and will give not external indications that the
engine is overheating, because it isn't. The gauge will be very erratic but
will not 'jump' instantly. If the gauge flicks very quickly or jumps
instantly it is an electrical issue.
