Dancing Heat Gauge

I own a couple of wonderful 1985 900S, and I have found this list to be
of immeasurable help to me, as the nearest dealer is 50 miles away.

Here's today's head-scratcher:

I got the car (8 Valve 900S) in Florida this summer, and discovered when
the weather turned cold that somehow the rod connecting the dash heat
control and the valve on the firewall was missing.

So I manually turned it to full heat, and now things are acting strange.
I should note that, gauge-wise, this car had run since summer in the
warmer regions of green, pretty consistently, at about '3/4 tank' away
from the red part of the gauge.

Well, now three things are happening: first, when I first start the car,
I can hear a distinct 'water gurgle' just in front of the gauges. It is
audible pretty much each time I start the car.

And when I get going, the gauge does a consistent 'dance:' first it goes
up way into the hot, sometimes pegging the needle. Then, suddenly, it
will jump to half-mast state. It then slowly climbs back up in to the
red again, and then again jumps back. Over and over.

Meanwhile, the air coming out of the vents never gets anywhere as hot as
the air coming out of either of the other cars. It is only tepid at
best, and I'm not really looking forward to winter if that's as hot as
it's going to get.

So I wonder if this set of behaviors is some sort of classic thing an
old-timer would instantly recognize.

No coolant is being lost, btw, and there is no other indication that the
engine is really overheating.
