Most of the cost of replacing the chains comes from labour. To replace all
the guides for the timing chain, the timing cover and head have to be
removed. While your mechanic is in there, I would suggest so inspect the
condition of the chain, sprockets and tensioner and replace what necessary,
at least the chain and guides.
About leaving the chain out, designers surely had a very good reason to add
the shafts to a very well running engine. If you leave the chain out,
you'll keep wondering how much smoother the engine would run fully
functional. If you sell the car, you'd have to tell this.
I am personally trying to run my Saab on a low budget so I do all service
and repairs myself. The chain replacement took a weekend. A good (factory)
manual is essential as well as good nerves.
