Victim = 1988 Saab 900 Turbo Convertible

I just purchased this vehicle and have found a few things that I need help
figuing out.

- I get a slight knock climbing long hills - is this timing or do I need
high octane fuel in this car?
- The previous owner took off the stock fan and installed an aftermarket
single fan about 10' in diameter and has it always running.  He also
disconnect the temperature guage.  I want to replace this fan and the stock
model and reconnect it correctly.  The radiator looks good and the
thermostat looks like it was just replaced.
    Do I need to know anthing about the high temperature I am getting?  
Where can I get a replacement thermostat at a lower temp that opens
correctly.
How do I tell if I have a water pump problem since I can't see into the
radiator as it is running.
I want to rebleed the water system to see if high temp is from air in the
system - Is there anything else I need to know
